Clegg also suggests using recipes that can be prepared ahead of time. ?For an appetizer, Cold Poached Salmon with Dill Dijon Sauce, is a make-ahead and simple recipe that will wow your company anytime. The dill dijon sauce is so good you could eat it with a spoon.?
For another party appetizer, Clegg suggests using fresh Atlantic salmon to whip up wonderful miniature salmon cakes with horseradish caper sauce.??You can make patties ahead of time, refrigerate, and cook before using. ?It's so good,? says Clegg. ?For another twist, turn your salmon cakes in to salmon sliders by placing on a bun.?
While easy and impressive, you'll also feel good about the nutritional quality of the salmon you serve. Atlantic salmon is high in omega-3 fatty acids, a source of antioxidants and an excellent source of proteins.
